Bombay Borough presents ‘Beyond the Jar‘, India’s ancient fermentation practices, inviting guests in Dubai to embark on an artful culinary journey. Until October 20, the eatery is inviting people to ‘Beyond the Jar’ for good food and good ambience.
This month-long campaign is a tribute to the alchemy of fermentation – a process that has quietly nourished and flavored kitchens across the globe for generations. The event is aimed at balancing tradition and modernity effectively.

Bombay Borough crafting artisanal ferments in-house
Bombay Borough presents ‘Beyond the Jar’ atin DIFC is letting its guests experience the diverse fermentation techniques spread across India. Each dish is going to flaunt the nuanced flavors and ancient methods that define this age-old craft.
The popular eatery is crafting artisanal ferments in-house. Ferments include,
- Kefir – a fermented milk drink from the 19th century in the North Caucasus. It entered India via Karachi.
- Inji – a pickled blend of ginger, tamarind and spices from South India
- Sourdough – a naturally fermented bread. First created in Egypt, this item started gaining prominence in India through Goa in the early 2000s.
- Kanji – an ancient nutrient-rich carrot drink popular in Rajasthan for its cooling properties.
- Fermented rice batter – a sour blend of rice and black gram, influenced by Indonesian cuisine.
Experience tradition & modernity through ‘Beyond The Jar’
For an immersive experience, ‘Beyond the Jar’ at Bombay Borough is offering its guests an exclusive presentation of ferments, beautifully placed in bespoke jars. It is meant to help diners explore the intricacies of each ferment and the artistry behind the dishes.
Each dish served during this campaign is meticulously crafted to introduce the perfect mix of traditional Indian techniques and the finest international ingredients. Some of the most anticipated dishes include,
- Mit Mirsang King Kish – a spiced fish marinated in Mit Mirsang, served alongside Idiyappams and tomato oil
- Truffle and Burrata Sourdough Naan – imagine Sourdough naan and earthy truffles, buratta and caramelised onions as toppings.
- Grilled Scallop Hooman – scallops grilled in local spices
- Egg Kalaki Hopper – a fermented rice hopper cradling a Kalaki egg. This limited edition menu is an invitation to experience the ancient, rare and refined.
