HISAYA Japanese Restaurant is an authentic dining experience, where centuries old Japanese culinary traditions are brought to life through dishes that are rarely found anywhere else, in the city. The kitchen is credited with introducing Seiro Mushi, a bamboo-steamed cooking method and also the famous HISAYA Ramen, the city’s first Potage Ramen, where a creamy chicken and vegetable broth is fused with French-inspired technique. Sukiyaki, which is another dish worth mentioning, is prepared the traditional way, with thin slices of beef simmering in a sweet shoyu base, alongside leeks, mushrooms, tofu and noodles. The Collagen Mizutaki Hot Pot, a Fukuoka classic, is served with a slow-simmered chicken bone broth, which is proved to be healthy and beneficial for the body.
An extensive menu spans seiro platters built around A5 Japanese Wagyu, salmon ad scallop, sashimi cuts including ootoro, chutoro and hamachi and a dedicated sushi roll selection, featuring the house Signature Roll, made with A5 Wagyu beef, alongside Dragon Rolls, Unagi Rolls and a Wagyu cheese Roll.
